FOOD: Malteser Cookie Bites

I’ve always wanted to crack a good cookie recipe. My cupcakes are fine, brownies are good, but cookies I could never get right. So, I’ve been back in the kitchen again trying out a new recipe (original here) to see if malted powder and maltesers were the key to chewy cookie joy. They didn’t spread out as much as the originals, but instead made the perfect bite sized chunks, which I’ve come to prefer. The chocolate is perfectly melted when you take them out of the oven and cool down to the ideal chewy texture that leaves you wanting to eat approx ten in a row. They’re done from start to finish in 20minutes, so are the perfect quick weekend bake!

Ingredients (for 30 cookies, I halved the amounts):
2 1/4 cups / 285g plain flour
1/2 cup / 65g malted milk powder
2 tsp cornstarch or cornflour
1 tsp bicarbonate of soda (baking soda)
1/2 tsp salt
3/4 cup / 170g unsalted butter, room temperature
1 cup / 220g dark brown sugar
1/4 / 50g cup granulated sugar
1 large egg
2 tsp vanilla extract
1 cup / 175g chocolate chips
1 cup / roughly 15 maltesers, chopped (I halved them)

How To Do It:
Step One | Preheat your oven to 350F / 175C / gas mark 4 and line baking trays with baking parchment.
Step Two | In a bowl, mix the flour, bicarbonate of soda, cornflour and salt together and set aside for now.
Step Three | Cream together butter and the sugars until smooth, then add the egg and vanilla extract until combined. Then slowly mix in the dry ingredients.
Step Four | Stir in the chocolate chips and Maltesers, combine until it forms a dough then form tablespoon sized balls, placing them approx two inches apart on the baking tray.
Step Five | Bake for 10 minutes, or until golden brown at the edges. Once removed from the oven, wait a few minutes before transferring them to a wire wrack to cool completely.

So that’s my little cookie recipe. The dark brown sugar gives them a perfect golden hue and a richer taste, which I really love. You could switch up the maltesers for other chocolate if you preferred, too, making them quite customisable if the malt ain’t really your thang. If you decide to make them, let me know!
