BAKING: Fudge Brownie Cupcakes with Cookie Dough Frosting

I love brownies. I love cupcakes. I love cookie dough. So, why not mush all three of those into one delicious treat? Why not indeed. The cupcake recipe is one I’ve used since, well, forever and gives a great rich chocolate fudgey taste. It’s also super light and spongey so you don’t even feel bad for eating three in a row. The frosting is a new one to me, but jeez does it go well with the cake. Heaven right thurrr you guys.

Ingredients (makes 12-16 cupcakes, half recipe makes 9):
For the cupcakes
80g unsalted butter, softened
280g caster sugar
200g plain flour
40g cocoa powder
1tbsp baking powder
1/4tsp salt
240 whole milk
2 eggs, large

For the frosting
115g unsalted butter, softened
150g light brown sugar
1tsp vanilla extract
157g plain flour
1/2tsp salt
60ml whole milk
180g chocolate chips (I used M&S chocolate chunks because why not more chocolate?)

How to do it:
Step One | Preheat oven to 170 fan / 375 F and line two trays with cupcake cases.
Step Two | For the cupcakes: Mix the butter, caster sugar, flour, cocoa powder, baking powder and salt on a medium speed until it becomes a grainy, sandy texture. In a separate bowl, whisk together the milk and the eggs until combined and steadily add it to the dry mix until incorporated. The mix should be quite liquid, but that’s what you want. Pour into cake cases, filling them about 1cm from the top and bake for 20-25minutes.
Step Three | While the cakes are cooling, mix the frosting: Mix the butter and sugar together until creamy. Add in the vanilla, salt and flour until doughy then mix in the milk until fluffy. Gently fold in the chocolate chips. Add to the cooled cupcakes with a palette knife. Cakes can be kept up to five days in a container.

Easy right? The cakes take less than 10minutes to throw everything together, same with the frosting. You can do the recipe from start to finish in less than 45minutes if you’re on schedule – my number one reason for loving cupcakes! Adore a good throw-it-all-in-a-bowl recipe.
