I was feeling quite summery the other day and this Waitrose recipe my mum mentioned recently popped into my head. I adore the mix of raspberry and coconut (the cake from M&S is amazing) so felt this bake was perfect for the weekend. They’re sweet without being overly sickly, the perfect size for a anytime treat and I’m not even ashamed to say I’ve eaten most of the ones I made by myself … mmm.
Ingredients:
100g butter, room temp
150g raspberries
50g granulated sugar
175g caster sugar
3 eggs, separated
100g ground rice
150g desiccated coconut
How To Do It:
Step One | Preheat your oven to 180C / Gas Mark 4 and butter a roughly 30×20 shallow baking tin. Put the raspberries and the granulated sugar in a pan and heat gently until the sugar dissolves, then simmer for five minutes until it’s thick and syrupy. Allow to cool.
Step Two | Beat together the butter and 100g of the caster sugar until pale. Beat in the egg yolks one at a time and, then stir in the ground rice and 100g of the coconut to make a dough. Press into the baking tin and spread the raspberry jam over the top evenly.
Step Three | Whisk the egg whites until stiff and then mix in the remaining 75g caster sugar until the mix is glossy. Fold in the remaining 50g of the coconut and spread the mix over the raspberries so they’re covered. Bake for 25-30mins (mine just took 25) until the topping is golden brown. Cool in the tin, then cut into slices. I removed the golden brown topping with a knife when cold, then sprinkled some coconut over to serve. Store in an airtight container.
So, I hope you liked this weeks bake! You could swap the raspberries for strawberries or other soft fruit if you preferred too, so it’s quite an adaptable recipe. They’re really quite delicious and tick all of the summery boxes, oh and are a perfect size for a picnic or a little afternoon treat too.
