FOOD: Lemon and Blueberry Cheesecake Bars

This was the recipe that was supposed to make it’s way onto my blog last week, but  as you’ll all know from my previous post, a cold meant I couldn’t go get the ingredients. As that’s subsided now, lemon and blueberry cheesecake bars were back on the agenda and oh they were so worth the wait. They’re the perfect balance of tart and sweet and are perfectly delicious, if I do say so myself…

Ingredients (makes 1 tin, approx 16 bars):
For the base
1 and 1/2 cups / 150g biscuits 
90g melted butter
70g sugar

For the filling
450g cream cheese (I use a packet and 1/3 of Philadelphia)
1 large egg
70g sugar
zest of 2 medium lemons
juice of 1 medium lemon
1 tsp of vanilla extract
225g frozen or fresh blueberries

How To Do It:
Step One | Preheat the oven to 350F / 175C / Gas Mark 4, line a baking tray with aluminium foil with enough to hang over the edges.
Step Two | Use a food processor to pulverise the biscuits into a fine crumb, add the melted butter and sugar until completely combined. Press into the baking tray and bake for 5 minutes. Allow to cool.
Step Three | Using a mixer (handheld or freestanding), beat the cream cheese for a minute until smooth. Add the egg, sugar, lemon zest, lemon juice and vanilla extract and mix until completely smooth. Fold in the blueberries.
Step Four | Spoon the mixture over the (now cool) base so it’s even. Bake for 30-35 minutes or until the cheesecake is lightly browned on the edges. Allow to cool for 30minutes and then completely chill for at least three hours. Lift the foil out of the baking tray and cut into bars. You can keep it in an airtight container in the fridge for up to five days.

Such an easy throw everything in a bowl sort of recipe. It may take slightly longer with having to chill it etc, but it’s definitely worth the extra patience. My boyfriend had two slices, so I’m guessing this recipe is a winner! Oh and you could always substitute blueberries for other soft fruit (like raspberries, mm) if you want to aswell.
