What I’m Cooking This Week #4

The lunches and mains I'm meal prepping this week...

Following on from my story question on Instagram, I'm going to start documenting what I'm cooking or meal prepping every week as you all said you wanted to see it! I do typically share my meals on stories, but I thought this might be a nice way to share a meal plan of sorts if any of you wanted to follow along or just wanted some inspiration for your own meal planning.

Worth noting -

I mostly eat pescatarian and vegetarian/vegan with a very limited amount of dairy (my skin hates it) and more of an emphasis on quality protein. I love variety and nutritious food, but still enjoy baking and have something sweet every day (and not just a square of dark chocolate because that's boring). I am cooking for myself and my partner only and tend to do 1 shop per week, typically meal planning on a Sunday and getting a delivery on a Monday, so I'm going to try and post this on a Sunday if I can.

Anything under 30 minutes I class as quick. Anything 30-40mins is reasonable!

Lunch

Lunch is around 6 days worth of food between 3 recipes and you'll need to fire up the oven for 2 and one can be no-cook if you use a pouch of grains. You can easily cook 2 recipes at once in the oven if you like!

I'm still painting the house, so quick recipes I can grab and eat are essential.

Quinoa Salad with Coconut Milk Dressing - pan (if using) - 2 days (quick)

A very refreshing and tasty dish. Say no to boring salads!! It's no cook if you use a pouch of quinoa, or batch cook some to have with main meals throughout the week.

Roasted Chickpea and Veggie Bowls - oven - 2 days (reasonable)

I want to eat as many different vegetables as possible this week, so this recipe helps.

Cauliflower Hummus Bowl - oven - 2 days (reasonable)

I made this last week and I'm making it again. It's too good!

Main Meal

I've made all of these recipes before but I don't think I've shared them before. They're all easy to put together and a little pescatarian heavy this week.

Curried Salmon and Herby Rice - oven - 1 day (quick)

Using up the rest of the tin of coconut milk from the lunch recipe! I've made this before and it's quite delicious.

Sweet and Sour Tofu - pan - 1 day (quick)

One of my favourite flavours and this vegan recipe is 10/10.

Cajun Garlic Butter Fish - pan - 1 day (quick)

I use either hake or salmon for this and serve it with couscous or rice.

Fish Taco Bowls with Cilantro-Lime Rice - pan - 1 day (quick)

I've made this many times before and it's delicious.

Smokey Bean and Fish Stew - pan - 1 day (quick)

The recipe uses monkfish, but as I have not won the lottery, I tend to use either hake or prawns.

Rice and Vegetable Aash with Puy Lentils - pan - 2 days (quick)

A good one to have when you want something that lasts multiple days. I have it with a garlic naan bread.

If I was baking something this week...

Lemon and blueberry muffins - I'm dying to make this recipe again as they taste very good and freeze well too. I always add chunks of white chocolate.
