What I’m Cooking This Week #6

The lunches and mains I'm meal prepping this week...

Hello! I hope you've been enjoying these posts as I feel like they're nice to refer back to when your mind is blank and you can't think of a single recipe. That's how I felt doing the food shop this week, so I referred back to my favourite food bloggers and recipe developers to find some new things to try.

I may do a blog post on my fave websites soon, so keep an eye out for that!



Anyway, backstory to these posts:
 Following on from my story question on Instagram, I'm going to start documenting what I'm cooking or meal prepping every week as you all said you wanted to see it! I do typically share my meals on stories, but I thought this might be a nice way to share a meal plan of sorts if any of you wanted to follow along or just wanted some inspiration for your own meal planning.

Worth noting -

I mostly eat pescatarian and vegetarian/vegan with a very limited amount of dairy (my skin hates it) and more of an emphasis on quality protein. I love variety and nutritious food, but still enjoy baking and have something sweet every day (and not just a square of dark chocolate because that's boring). I am cooking for myself and my partner only and tend to do 1 shop per week, typically meal planning on a Sunday and getting a delivery on a Monday, so I'm going to try and post this on a Sunday if I can.

Anything under 30 minutes I class as quick. Anything 30-40mins is reasonable!

Lunch

Lunch is very chickpea heavy this week because they're my favourite things to eat! They're filling and take on spices and flavours easily, so they're a very versatile (and cheap!) protein source in my opinion. I've chose 3 recipes for 6 days worth of meals. I always do 6 rather than 7 as some days, if I haven't prepped, Phil (my partner) just gets his own lunch and it takes a bit of pressure off me, especially if I'm busy like I have been recently with decorating!

Chickpea Shawarma Bowls - oven - 2 days (quick)

A repeat from last week, but the combination of spices on the chickpeas was so addictive that I need to make them again!

Roasted Cabbage Salad with Maple Miso Dressing - oven - 2 days (quick-ish)

I have some miso and cabbage to use up, so this seemed like the perfect recipe. I'll serve it with rice or grains I think.

Balsamic Glaze Marinated Chickpea Salad - no cook - 2 days

Homemade hummus is my thing right now, so that combined with balsamic should be a winner.

Main Meal

We're going with very easy recipes this week so I've chosen 2 newbies and 1 meal that I make all of the time. I may add another tofu noodle recipe, but we'll see what happens as I may not have access to my kitchen if the building work we have planned goes ahead at the end of the week.

Lemon Garlic Salmon Tray Bake - oven - 2 days (quick)

I'm going to do this with a white fish instead of salmon, but it seems so easy that I don't think you can go wrong!

Pasta with Hidden Veg Sauce - pan - 3 days (quick)

I've mentioned this many times now, but it's a good no-brainer recipe when you need something to last multiple days.

Couscous Skillet with Tomatoes, Chickpeas and Feta - pan - 2 days (quick)

I don't often have cheese, but I'm craving feta so I'm going to try this recipe. It seems simple enough and would go well with kale or other salad.
