What I’m Cooking This Week #7

The lunches and mains I'm meal prepping this week...

Hello! I'm trying to keep everything a bit simple this week as I'm planning to do a lot of painting and other work next week. Everything is very straightforward and reasonably quick, or easy to prep and reheat!

I'm also going to bake a batch of cookies this week and split it into three: chocolate chip, cherry and white chocolate and double chocolate. I'll bake a couple and then freeze the rest.

 



Anyway, backstory to these posts:
 Following on from my story question on Instagram, I'm going to start documenting what I'm cooking or meal prepping every week as you all said you wanted to see it! I do typically share my meals on stories, but I thought this might be a nice way to share a meal plan of sorts if any of you wanted to follow along or just wanted some inspiration for your own meal planning.

Worth noting -

I mostly eat pescatarian and vegetarian/vegan with a very limited amount of dairy (my skin hates it) and more of an emphasis on quality protein. I love variety and nutritious food, but still enjoy baking and have something sweet every day (and not just a square of dark chocolate because that's boring). I am cooking for myself and my partner only and tend to do 1 shop per week, typically meal planning on a Sunday and getting a delivery on a Monday, so I'm going to try and post this on a Sunday if I can.

Anything under 30 minutes I class as quick. Anything 30-40mins is reasonable!

Lunch

We're doing easy lunch recipes this week! 3 recipes and 6 days worth.

Chilli Lime Chickpea and Cauliflower Wrap - oven - 2 days (quick)

Gotta love a wrap! I like the idea of chilli lime too.

Roasted Cabbage Salad with Maple Miso Dressing - oven - 2 days (quick)

I had this last week and it was really tasty/easy, so I'm making it again.

Sweet Potato Romesco Lentils - pan - 2 days (quick)

This looks so comforting and will be dipping copious amounts of buttery bread into it.

Main Meal

Quite a few newbies and 1 repeat this week. I've kept everything easy as I'm back to painting this week so everything needs to use minimal brain power.

Lemon Garlic Salmon Tray Bake - oven - 1 day (quick)

Another repeat from last week. It was so quick and easy. I added roasted courgette too and served it with couscous.

Chilli Crunch Tofu Bowl - pan - 1 day (quick)

Any time I see chilli and tofu, I will add it to the list.

Creamy Sun Dried Tomato Beans - pan - 1 day (quick)

This looks very wholesome and I just know it's going to taste good.

Garlic Pepper Tofu Stir Fry - pan - 1 day (quick)

A quick and easy no-brainer.

Shrimp Bowls with Coconut Cilantro Lime Rice and Pineapple Salsa - pan - 1 day (quick)

I'll either use prawns or salmon for this one, but anything with pineapple salsa is my jam.

Roasted Sweet Potato and Chickpea Bowls - oven - 2 days (quick-reasonable)

I like the idea of the dressing on this. I'll add some protein source to this, either prawns or tofu or fish.

If I was baking this week...

and I am! I'm going to do cookies and I always use this recipe as the base as it always works out well every time I make it.

If you're baking it straight away, make sure you put the dough in the fridge for at least an hour (preferably 2) so you end up with chunky cookies. If you want to pop some in the freezer, just roll them into a ball and pop them in a ziplock bag. I put them into the oven at 180 degrees for 10mins from frozen.
