What I’m Cooking This Week #9

The lunches and mains I'm meal prepping this week...

Hello! I've missed a few weeks of these posts as I've been so busy and having work done to my home, so I wasn't able to access my kitchen. Eating ready meals for 4 days wasn't fun to me as someone who likes to cook, but I'm back now, baby.

 



Anyway, backstory to these posts:
 Following on from my story question on Instagram, I'm going to start documenting what I'm cooking or meal prepping every week as you all said you wanted to see it! I do typically share my meals on stories, but I thought this might be a nice way to share a meal plan of sorts if any of you wanted to follow along or just wanted some inspiration for your own meal planning.

Worth noting -

I mostly eat pescatarian and vegetarian/vegan with a very limited amount of dairy (my skin hates it) and more of an emphasis on quality protein. I love variety and nutritious food, but still enjoy baking and have something sweet every day (and not just a square of dark chocolate because that's boring). I am cooking for myself and my partner only and tend to do 1 shop per week, typically meal planning on a Sunday and getting a delivery on a Monday, so I'm going to try and post this on a Sunday if I can.

Anything under 30 minutes I class as quick. Anything 30-40mins is reasonable!

Lunch

As usual - 6 days worth and 3 recipes to try. I'm doing one repeat recipe and 2 new ones this week. I've already ate one portion of the lemon chickpeas and they're so good.

Chilli Lime Chickpea and Cauliflower Wrap - oven - 2 days (quick)

So delicious so I had to make it again! It was also great in a sandwich. Don't skip the quick pickled onions, they're worth the extra few minutes of effort.

Sticky Lemon Chickpea Wrap - pan (but I did mine in the oven as it was already on!) - 2 days (quick)

Everything I could want in a wrap! I made my partners portion in a bowl with kale, broccoli and grains so it's adaptable too.

Roasted Cauliflower Date Salad - oven - 2 days (easy)

I love the contrast between sweet and savoury, so I'm excited to try this one.

Main Meal

I'm trying quite a few new recipes this week!

Sesame Miso Salmon - oven - 1 day (quick)

The recipe is with chicken, but I'm swapping it for salmon. This looks very easy and tasty!

Basil Thai Noodles - pan - 1 day (quick)

I'm using protein noodles and tofu instead of beef for this one.

Crispy Baked Gochujang Tofu Noodles - oven and pan - 1 day (quick)

I love me some gochujang and I have some to use up, so this is a no brainer.

Shredded Brussels Sprout Salad - oven - 2 days

I'll be doing this with hake and hoping to make enough to last 2 days, maybe with prawns the next day.

Sweet Potato Chilli - pan - 2 days

I haven't made chilli for such a long time as I used to make it with fake mince, but it gave me the ick so badly that I haven't made chilli for years! I'm going to give it another go with sweet potato and lots and lots of lime.
