FOOD: Creme Egg Brownies

Hello! Hope you all had a lovely Easter, spent time with family or had a day out and got an insane amount of chocolate eggs. Now, as a person who finds eating plain chocolate quite boring, I thought I’d have a little look online to try and find a way to use up some of those Easter eggs you may not have managed to eat (yet). As I was browsing, a picture of Creme Egg Brownies appeared and I was in the kitchen faster than I could say ‘I need to make these’. They’re super simple and taste like I’d imagine Heaven to be like if it were made out of chocolate…

Ingredients:
185g dark chocolate (I used 70% cocoa)
185g unsalted butter (room temp)
85g plain flour
40g cocoa powder
3 eggs (room temp)
275g caster sugar
4-6 creme eggs (fridge cold)

How To Do It:
Step one | Preheat oven to 180degrees/gas mark 4.
Step two | Melt together the butter and chocolate, I did mine over a pan of hot water, but you can always do 30 second bursts in the microwave. Once melted, move to one side and allow to cool down.
Step three | In another bowl, crack the eggs and add the sugar and whisk until it looks mousse-like. It should take a few minutes, but it’ll double in volume. Add this to the (now cool) chocolate/butter and combine together.
Step four | Sift the flour and cocoa powder into the bowl and gently fold it in. Make sure it’s all incorporated, it should make a thick batter. Pour the mixture into a baking tray and bake for 15-20minutes.
Step five | Once baked, take the tray out and cut the creme eggs in half. I used four, but that made quite big chunks when cut up, so you could use five for smaller pieces. Place the halves on the brownies (pushing them in slightly) and place the tray back into the oven for a further 10minutes to melt the creme eggs. Once finished, let them completely cool before cutting them up!

…And that’s them finished! They should be slightly crispy on the top and extremely fudgey/gooey on the inside. Perfect for a little Easter treat and take no time at all to make. You could even substitute big Creme Eggs for small ones and make bite sized pieces if you wanted, which would be great for kids or if you’re having people over. Have you tried these before?
